The rural Illinois town my parents grew up around used to have an annual Testicle Festival. Really classy. I can't do liver, man I've tried it different ways and in sausage, etc. and I don't even really like foie gras pate. It's the taste and texture. I feel a little bad about leaving deer livers in the field but the ravens gotta eat too. That reminds me, it's about time I get to turning some trimmings into sausage. Liver pudding is amazing - it's similar to liver mush but really not the same thing. I probably would never try it if I hadn't been eating it since I was a little girl. Fried with breakfast or cold on a sandwich anytime. And now I'm going to the store to get some.
While I can see arguments for college coaches being overpaid, trying to engage with that crowd on why its OUTRAGEOUS that a coach be paid that while Professor Frizzle in the Gerentology Department makes much less and trying to explain what each contributes to revenue generation is enough to make your head explode. I'm not anti-arts by any means, but they don't realize that people are compensated based on value and what revenue they bring in, not as some charity case. You don't get paid cause people like you. I don't love liver in its pure form, but chicken liver pate is my JAM. I fucking love that stuff. Order it 90% of the time I see it on a menu.
Chicken livers are for catching catfish, which is to me infinitely better than any liver. Chicken hearts on the other hand, are like meat grapes. Yes please.
