    I used to think Indian food was tough to make, until a friend pointed out that I was just too lazy to find the right spices. If you have the right spices, it's as easy as any other sort of food, with the exception of naan. Making naan is basically equivalent to wizardry.

    While I haven't made it myself, the GF has made quite a few batches effortlessly. Maybe you're using a weird recipe?

    Then again she is also really fucking good in the kitchen, so maybe it's just easy for her.

    I'm not particularly good at breads or stuff, I much prefer things sizzling. All the recipes I've found struck me as needlessly complicated.

    I think recipes have evolved to become more and more complicated because we have better tools and a wider array of ingredients. With traditional things like naan, I think the basic recipe is actually pretty easy. Not to say quick....but easy. Breads especially take a long time to make, but there are plenty of simple and delicious recipes out there.

    Again, with the culturally traditional foods, you have to have the right ingredients. Certain spices and types of food are very regionally localized and people used them in their meals. So, you've got to do the same thing if you want an authentic food X from region Y.
