    Business idea:
    1) Begin company to selectively breed various animals so that they are farmable
    2) Find labor, capital, financing, etc.
    3) Wait many generations
    4) Profit

    There's plenty of bison farms around, I know it's not that exotic, but it beats the hell out of just cow and pig. and it's healthy.

    Seriously, go to a dairy farm and watch how they behave. Ridiculously obedient, they are fucking massive but you can hold an entire herd of them in captivity with a waist high chain. No wild instincts, if they do manage to break out of holding, they won't go anywhere, they'll wait around to be put back. They also won't fuck anybody's shit up, very docile creature.
