Really been practicing my rib process from beginning to end to try and get better, consistent results. These definitely don't suck.
First "practice" turkey on the Yoder for my wife's work Thanksgiving party. Turned out really well, but definitely a couple of small areas for improvement for next week's main event.
That looks delicious. I don't spatchcock mine, i like to stuff it with dressing so i can have that smoked too, but it takes way longer the spatchcocking.
Thanks for the reminder... With Thanksgiving coming up next week, I am once again reminding everyone that instead of putting stuffing in your turkey, make muffins instead. You can smoke those too if you'd like, and you drastically lessen your chances of getting salmonella. https://www.theidiotboard.com/threads/2022-holiday-revelry-thread-nsfw.255130/#post-682516
I'm not saying don't have stuffing/dressing, just don't cook it INSIDE of a turkey. There's much better techniques that produce much better results.
Congrats! Look up RumandCook on YouTube, he has a whole series on beginner tips and tricks specifically for the Yoder. A lot of good info that I ended up using myself and a few things I would've never known had I not watched those videos.
Used the Yoder for the first time last night. It was amazing. Did a small hunk of beef tenderloin and it worked flawlessly. Their remote control even let me control it while I was running some errands.
Welcome to your new favorite toy. If you haven't already, I recommend you give the exterior a solid spray and wipe with some ACF-50 all over the actual smoker. Since you're in an area that isn't the desert, it's a good rust preventative. You don't have to worry about the competition cart since that has a powder-coat finish. Not sure what accessories, if any you got, but if you want some recommendations, I can give you my opinion on the ones I bought.
yeah... it's covered in snow and water right now, I'll treat it in the Spring when the weather gets better. If it gets a bit of surface rust, no bid deal... this thing is built like a tank. I got a ton of the accessories... shelves, grease catcher, firebox oven, grates, etc. Don't think there was an accessory I didn't get, honestly. Anything that you have that wouldn't be part of the typical cross-sell, up-sell stuff?
If you didn't get the fitted cover, I can't recommend that enough, especially if you're keeping it outside in the elements. Also, not an accessory per se, but something I've got that has actually come in handy is a small ice scoop, like this one. Doesn't need to be fancy, but since the hopper is closed and there's no release shoot for the pellets, if you DO end up having to clear it out due to an auger issue or any reason, it helps with getting the pellets out. I also have a couple of pellet storage containers from Tractor Supply. They're good for if you want to have different flavors of pellets and need a way to separate them. I also threw a couple of big desiccant packs in each one, just to ensure the pellets don't get wet and gummy from humidity.
Yep. Have the cover and the insulating cover for cold weather. I have horse feed scoops that I repurposed from the dog’s old dry food that she no longer eats. I also have 2 huge silicon kibble containers that I’ve repurposed for pellet storage that I keep in my heated shop. No humidity issues. I think I’m pretty well set up right now.
Speaking of the Yoder, making some over the top chili today. Did a mix of beef/pork and added in a pound of ground venison from a buck my neighbor got just a week ago.
You can remove the diffuser and have direct flame into the bottom grate for direct flame grilling. It gets damn hot in full flame mode.
Just did a trial smoked turkey on the Yoder. Couple of small tweaks I’ll make, but damn is it tasty! Cut the turkey up into parts, slathered on some Dale’s mayonnaise as a binder, then coated everything in Meat Church’s Holy Voodoo rub. The wings and thighs and legs finished about an hour earlier, as expected. Timing confirmed. Skin could have been a little bit crispier, but the meat was delicious. Highly recommend!
