I'm always interested in anyone covering a Beatles song, since not many musicians can pull it off well. I've always felt that the soundtracks to both I Am Sam and Across The Universe only make me appreciate the originals that much more. Besides the work of the great Joe Cocker, here is the exception to the norm:

I listened to a lot of ska back in high school. Here's two songs I really liked. "S.O.S" by Mad Caddies (Abba cover)-they took a shitty song and made it awesome. "Take on Me" by Reel Big Fish (A-Ha cover)

Yeah, that's right...I said it. Ryan Adams blew the Oasis version (which I never thought was more than an average song) out of the water. Red dot away. I second whoever said Jeff Buckley's version of Hallelujah. Anything covered by Joan Osborne, ever [this video takes about 15-20 seconds to kick in]. Seriously, it makes no sense that she's white with that voice. And this almost makes up for the abomination that was Turn the Page:

James Hetfield of Metallica covering Waylon Jennings. I do believe he played guitar, bass, and drums on this tune. Pantera covering Black Sabbath's Electric Funeral: Black Label Society doing Ozzy's No More Tears. (Listen to that goddamn solo) Zakk Wylde circa 96-98 doing Zep's Going to California:
The Blanks' cover of Hey Ya by Outkast, featured in Scrubs. They also cover Somewhere Over the Rainbow in Scrubs, which I really enjoy.
My favorite remake is System of a Down doing "The Metro" by Berlin. Crank it up and get ready to tuck your boner into your waistband.
