    It was like filler for the gravy. Less than ideal.

    Because of that I'm buying a real turkey tomorrow and will smoke it for dinner on Thursday. I feel cheated.

    This is why I've taken over full control of Thanksgiving dinner for the past 5 years. Is it a pain in the ass trying to fit 25+ people in my house every year for dinner? Yes. Do I also get to maintain strict control over the entire dinner menu and make sure everything is actually cooked properly? Also yes. Some trades are worth it.

    Yeah... it was a political decision this year... we got to reap the "rewards".

    At least we're doing XMas this year, and TG next year.

    My ex's family did store brand boxed stuffing in the cheapest frozen turkey they could find, some kind of gravy, uh, mix? Is that a thing? Frozen mashed potatoes, canned veggies and cranberry sauce, and a frozen pie. The canned veggies would get heated in the microwave until they were wrinkled, shriveled and inedible.

    Turkey was shoved in the oven and ignored, it was considered cooked when they felt like eating. Usually had the consistency of the Griswold family turkey.

    It was a nightmare. They weren't poor, just cheap and lazy.

    I should have known that a family who disrespects food like that could never spawn someone I would have long term compatibility with.

    FYI for anyone cooking chicken and need to know food safety temps, this is a handy chart. What it basically says is how long the meat has to hold the temperature for it to be safe to eat. So if you cook a chicken to 157, it just has to hold that temp for 30 seconds and salmonella is dead. The quoted 165 level is for instantaneous killing of salmonella, which is why it's recommended everywhere because people/restaurants are shitty at actually measuring temps of food and it's simplified so even an idiot can figure it out.

    Feel free to start cooking your chicken to 155 because in the history of the world zero food which reaches that temp comes out of the oven and immediately stops cooking.

    If it is out of safety against foodborne illness for immunocompromised sister, I can understand. My FiL got a transplant and now a ton of his food has to have the shit cooked out of it before he can eat it.

    If it is just preference you might as well just serve them some shoe leather and call it a day.

    Welp, he's got the apnea. Still waiting on a follow up appointment and equipment, but I read the report. Hoo boy. Not sure why they are calling it moderate vs severe but I am so ready for him to get treatment.

    Very interesting reading about those logarithmic scales at different temps and times. Ive sous vide eggs for an hour and a half at 135 to pasteurize them. Even if the method isn't as sound as the industrial scale egg pasteurizers it is better than just rolling the dice with raw eggs in recipes.

    I got one of these yesterday. I got my first reading of my sleep and holy shit, even though they say it takes the ring 5 days or so to completely sync up with you, your exercise level, sleep and so on if this is in any way accurate already, I'll be a member soon.

    That's a neat device, and the placement probably gets better data compared to devices on your wrist. How is the fit of the ring?

    Yeah, I've really doubled down on this "sleep" thing...

    I've always had problems overheating at night... I wake up hot, thrashing, sweating, and basically super uncomfortable. Fans, AC, etc, doesn't seem to help.

    So I bit the bullet and invested in one of these:

    It's crazy, even retardedly expensive, but it fucking works, I tell you what.

    I can now control my mattress temp. It has a series of tubes that it flows distilled water and hydrogen peroxide through, and it adjust the temps throughout the night to be cold or warm when you need it to be. It also has sensors in it to track your sleep patterns... movement, heart rate, respiration, etc. It analyzes all of that data and provides you with an updated temp profile/plan for the night.

    It might sound nuts, but man, it's nice and cool/cold when I want it to be, helps me fall asleep, and then warms up when my body needs it to be.

    I highly recommend it.

    Between that and the CPAP, it's like I'm living in a whole new world.
