Finally getting around to watching the first season of The Terror, or at least staying with it this time. Can't believe I didn't finish it before. Great TV and some really good actors that I like.
I’m pretty sure they kept it as a mini-series. It is a great show, though. That and Chernobyl are two of the best of the past decade.
@Revengeofthenerds So you do fry the rice in oil, but she saves the bacon grease for beans. I saw online about frying the rice but I've never cooked with someone who knows what they're doing so it was nice to have some certainty to the process. I've tried making authentic Mexican rice a whole lot and it's never quite right. She rinsed 2c of white rice and let it drain and dry in a metal strainer. She says you can skip this step to avoid breakage of the rice grains but prefers to wash. I think some people are purists about the rice grains. Prepared 3 tomatoes (San marzano), a quarter of an onion, and several garlic cloves in a blender. Add a little chicken broth from the chicken to thin out/ rinse the blender. She also had prepared chicken for enchiladas by boiling chicken breast in water seasoned with tomato/chicken bullion powder, an onion, and about 5 garlic cloves. It was a hearty sprinkling of the bullion powder but not a full strength broth. She wanted room to add salt later, she's a big salty person. Once the rice was dry, she heated a good amount of oil in the pan. Like probably almost a cup, it was a good amount sloshing about. She fried the rice on medium after mixing it around to coat all the rice in oil. It was a very light golden color when she was satisfied. Then she added and mixed the prepared blended tomatoes to the rice and raised it to high and let it bubble hard for a minute. This step comes fast and "the rice is jealous," so make sure you prepare the sauce beforehand. Then she cooked the rice with 4c of the liquid from the chicken breasts. Let it boil hard for a minute while mixing a little, then cover the pan with a lid and put it down to low. Cook for 30 min. We also made her enchiladas and I learned how she makes the sauce. Next up, really creamy Mexican beans.
Oh! The best part. We all begged her husband to perform, so played his accordion and sang for us at dinner. He's really talented and it seriously set the party off. The patron margaritas didn't hurt...
Apparently Mondays around 3PM is MILF time at the grocery store. I saw about a half dozen legit 8's and higher there.
