Be careful not to over smoke it. Had a buddy smoke a turkey like you'd smoke a butt and it tasted like an ashtray. On my BGE, I don't add any chips, just the smoke from the coals is enough.
Yeah, I tend to run it at a higher than smoking temp in my BGE... that nice crispy skin and a hint of smoke with a good blackened seasoning and butter rub was amazing.
I follow the serious eats recipe for a spatchcock turkey and they call for baking soda in their dry rub. It always works for me so I won't mess with success.
FYI, their recipe calls for baking POWDER, not baking SODA. I've always used powder in mine and it works well.
I’ve got 5 birds to do this year, I always smoke poultry at higher temps with minimal to no added wood - to many people are picky when it comes to smoked flavor. I do all mine on UDS smokers which tend to give a different flavor profile because your cooking direct over coals without a diffuser.
My wife intended to surprise me last night and bring our son home from school ( two hours away ) a day early. Except she forgot to turn off her location for the Life 360 app and when I checked to see if she'd be home before I left for a meeting I saw where she was. Either way it was a good thing because: She was working in a city halfway between here and there yesterday already Her "day off" today didn't happen, and they scheduled a mandatory meeting tomorrow ( which to her boss's credit, was fought tooth and nail to no avail ). My five day weekend started at 3pm. Been looking forward to this for a couple weeks.

All good dude. We’re not the bbq police. lol I just find the indirect heat from the BGE is a great way to cook turkey, especially with a nice curry or spicy rub in butter. Super crispy skin, nicely moist meat. Noticeably better than roasting in an oven I find.
Or dead... I like to think it's an old Bronco that's smoking a lot in the closed garage.... and they take turns revving it up from the throttle body with the hood up.

Happy Thanksgiving to you all! We are having a chill day over here. I settled on the menu a few days ago and prepped it yesterday. Kiddo is still sleeping, turkey is in the oven, and we are eating cheese. Dinner is a turkey, asparagus, company potatoes, sweet potato casserole, stuffin muffins, and a Caribbean fudge pie for dessert. I hope you all had a nice day.
We can only hope. That, and I hope that they were too stupid to do that intentionally in order to rile up the intarwebs. Watching people's home videos of doing their first deep fried turkey can be quite entertaining when they forget to test out basic volume stuff. Alton Brown actually did a great "deep frying your turkey without dying" video.
