I already posted this in the cooking thread, but thought I'd put it here to, just in case. Do any of you Idiots have a go-to sausage recipe that you recommend that uses beef (at least in part)? I've got a bunch of leftover ground beef and pork from the last couple of animals I bought and wanted to make a bunch of sausage with it for my annual barbecue. I've already got a Hungarian garlic recipe, a spicy Italian and a chorizo recipe that I will use for most of the pork, but not sure what to do with the beef.
2nd this. I would like to get into sausage making. I know the very basics but need some good recipes for southern style smoked venison sausage, maybe cut with some pork. If anyone has a tried and true recipe please post in the cooking thread. Where's kotchkotchbegosh when you need him? I've been here for 2 months and the first thing my heart is missing is conecuh sausage.

Since you repped me for the Chorizo recipe, I figure I'd post the whole thing here in case anyone else wants to try it. For reference, this is Michael Symon's recipe directly from his Carnivore book. 3 pounds boneless pork shoulder, cut into 1 inch cubes 1 pound fatback, cut into 1 inch cubes 1 3oz can chipotles in adobo sauce 1/4 cup apple cider vinegar 8 scallions, thinly sliced (white parts only) 6 cloves of garlic, minced 1/2 cup fresh chopped cilantro 2 tbsp. coriander (I use whole seed. Toast them first, then grind) 2 tbsp. cumin (Again, toast whole seeds and grind) 1 tbsp. dried oregano (Recipe calls for Mexican, but use whatever you have on hand) 1 tsp. smoked paprika 1/2 tsp ground cinnamon 1/4 tsp. ground allspice 2 tbsp. kosher salt 1 tsp. ground black pepper 1 tbsp. sugar Combine all the ingredients in a container and refrigerate overnight. If you have a meat grinder, first grind the whole mixture through a medium die, then return to the fridge to chill. Then blend with a paddle attachment. From there, you can form into patties, keep it loose to crumble or add into other recipes. If you're going to stuff into links, I would recommend throwing back into the fridge for another 30 minutes or so to chill and firm back up.
That's both entertaining and creepy as fuck. I can imagine a scene in The Walking Dead where some Elon Musk type character is bored, unshaven, bitter at the world, sitting in a lawn chair on a roof of an industrial park. He's got a big remote control looking thing in his hands while he looks down at a parking lot full of zombies milling around. He hits a button on his remote control, and music starts playing on the parking lot speakers. A few garage bay doors open up from the building... and out come a dozen of these robotic hounds... in perfect, unnatural lockstep. They then proceed to put on a bit of a show, choreographed to the music, and then when the music is done, they all just sit there, motionless. Elon flips a see-through plastic cover, hits a big red button, and then the once-funny robotic dogs go full on AI-powered killer mode and just fucking obliterate shit with clinical and mechanical precision in a matter of seconds. Yeah... I'd love to see that.
Andouille is my favorite beyond Italian and breakfast sausage. Emmeral laggasse s is pretty good his Cajun spice mix goes on everything. Ekkahardt the German butcher has some good brat recipes his thüringer brat is great, you got to find it on YouTube the real thuringer is a cured sausage. Any sausage makings questions ask away I make a ton.
It would be very interesting to know just how long they can maintain that activity on a single charge. Or how much they could ramp up the speed. I have no doubt that what we are seeing here is a very slowed down example... and that they could probably ramp it up 10 times that speed with the same results... but it would look fucking terrifying.
