I've never messed with wrapping it, though I know people swear by it. The Texas crutch is a thing for a reason. Glad you're getting into the BBQ thing. The best hobbies are the ones that produce something you can either use, eat, or drink at the end. Plus, BBQ has an incredible history, that goes back to slavery.
This sounds a lot like Steel Reserve. As long as they're cold, they go down like regular beer, so you chug down a few just to get your buzz started. Next thing you know, you're slurring and stumbling. I used to drink those all the time back in the RMMB days. I also used to black out a lot back then, too. Of course, I was often mixing them with pills, so take that as you will. Still nothing to take lightly.
The brisket took way way longer than expected. 13.5 hour smoke. Came off at 93, wrapped, and is now resting in the cooler. There were some pieces that didn’t get put in the cooler and they were damn tasty. Bark is exactly how I like it, and a nice smoke ring that’s not overpowering.
It's just a little bit smokey, and not as moist as I would like, but overall I'm pretty happy with the first brisket I've ever smoked.
Nice! Even with the Texas Crutch, I can’t seem to prevent my briskets from drying out. It’s the one thing on the smoker I haven’t really gotten yet.
I had to drive from Austin to Baton Rouge, and the rental car company couldn't give me another sad Kia bean fart. So they gave me a Dodge Charger that is bright orange. I drove the 2019 General Lee, listening to an audiobook about Stevie Ray Vaughn, or his music and....highly recommend the experience, minus the four hours of traffic.
If I start drinking, I can't stop until I go to sleep, that's just the way my brain works. That means I don't day drink, cause if I do, it turns into like 18 beers downed before I go to bed a 9:00. I just can't handle that anymore. I only drink anything about a dozen times a year now. When I do I start around 5:00 and still in bed by 9:00.
The days of routine day drinking are long gone, but I still keep in practice several times a year on “special “ occasions, primarily when we visit local breweries, cideries or wineries with friends, or have barbecues or beach parties. There’s also golf - I’ve played only two rounds this year, but both times we were drinking by 8 am. Also, every other year or so my friends from high school fly into a centrally located city and spend the weekend together, usually revolving around a concert. On those weekends if we’re awake, we’re drinking. Maybe I’m day drinking more than I thought.
I only day drink these days. If I drink after 5 pm, even one damn drink, I’ll sleep like trash. I like my sleep. I can have a couple in the afternoon and be fine. Getting old is weird. I can’t pound caffeine anymore either. I have one 1/2 caffeinated cup a day. Anymore and I think my heart is going to burst out of my chest and I won’t sleep that night.
